A probe thermometer for ensuring proper food temperatures was not calibrated and/or functioning properly. The thermoeter in question was a dial thermometer. The employees were shown how to check the thermometer for accuracy and how to calibrate the thermometer.

Observed various food items, such as hot pockets, stored directly on the floor in walk-in freezer area, rather than 6 inches off of the floor as required. The facility does not have adequate space or shelving to properly store the amount of product that came in with the delivery.

Sanitizer test strips to determine sanitizer concentration are available, but two employees did not know about them or how to use them. Manager provided training at the end of the inspection.
